This recipe is our super clean eating version of Chicken Marsala...but, it doesn't sacrifice FLAVOR!!! My hubby gives it 5 stars!
4 thick Chicken Breast, cut in half (long way)
1 cup Whole Wheat Flour
Olive Oil Spray
1 1/2 tsp Salt
1 1/2 tsp Pepper
2 cups Marsala Wine
2 cup Low Sodium Chicken broth
1-1 1/2 cup diced mushrooms
What to do:
1. Mix whole wheat flour, salt, and pepper in bowl
2. Coat each piece of chicken in egg and then in flour/salt/pepper mixture and set aside.
3. Pour marsala wine and chicken broth in deep pan. Once heated, add mushrooms and stir. Let simmer, covered for 10min.4. Brown each side of chicken with olive oil spray. (do not cook entirely through)
5. Add browned chicken to marsala/stock/mushrooms. Spoon mixture over chicken and cover until chicken is cooked fully through.
