Paleo Crockpot Tortilla Soup




One of my FAV crock pot recipes!  Hope you guys like it <3

Stacy Westbrook, Stacy Whitehead, Clean Eating, Accountability, Challenge, 21 Day Fix, Body Image, 21 Day Fix Recipes, Shakeology, Free People, Cheerleader, Health and Fitness Coach, Get in Shape


Ingredients:


4 large skinless chicken breasts
4 garlic cloves
1 yellow onion
1 red bell pepper
1 poblano pepper
1 jalapeƱo
1 (4oz) can diced green chiles
1 (14oz) can fire roasted tomatoes
3 tbps cumin
1 tsp chili powder
2 tsp cayenne pepper
3 tsp garlic powder
salt and pepper, to taste
32 oz fluid chicken broth
2 tbps Lime Juice
Avocado to Top!


Directions:

Add broth and chicken to crockpot and turn it on. Toss in the onion and garlic into the food processor, get it pretty finley chopped. Dump into broth. Repeat with peppers smile emoticon
Top the whole thing with the seasonings and canned items, and lime juice.
Cook on high for 3-4 hours or low for longer, and ta-da! 
Stir so the chicken shreds. 
Top it with avocado and it’s perfection.

Congrats to our Challenger of the Week - Connie Ketelhut!!!  Connie is a huge encourager and support system for everyone within our group!  There hasn't been ONE day she hasn't shown up and participated.  She's embracing the group, feeling happy, and seeing results! <3

I'm getting older and my body is feeling it. So, totally selfish reasons!


WHAT ARE YOUR GOALS, AND WHY ARE THEY IMPORTANT TO YOU?
My goals are to be healthy, fit, trim, and sexy! They are important to me because I haven't felt that way in a long time. I miss it!

AFTER WEEK 2, ARE YOU SEEING / FEELING RESULTS?
I see results in my clothes and the way they fit. I feel better physically just moving more.


WHAT IS YOUR FAV PART ABOUT BEING IN A CHALLENGE GROUP?
Interacting with others facing my same struggles and are owning up to it is my favorite part of being in a challenge group.

HOW HAS A CHALLENGE GROUP HELPED YOU?
I love the challenge group because everyone participating pushes me to be a better me.






HOW WILL YOU FEEL ONCE YOU REACH YOUR GOAL?
When I reach my goals I will feel accomplished. And sexy!! LOL

SPOTLIGHT Challenger of the Week: Melissa Kay Diaz


This week's SPOTLIGHT Challenger of the Week is MELISSA DIAZ!!!  I love Melissa's energy, enthusiasm and NO EXCUSES attitude!  Here is what she had to say after her first week within our group <3

WHAT MADE YOU DECIDE YOU WERE READY FOR CHANGE? 
I just wasn't happy where I was at in my life. My career is advancing but everything else was in a downward spiral. My eating was out of control, and I just felt tired and gross all the time, not to mention all of my clothes looked not so great on me. I knew I needed a change! 



WHAT ARE YOUR GOALS, AND WHY ARE THEY IMPORTANT TO YOU?
My goals are to get back into a fitness routine so I have more energy and feel better about myself. I also needed to kick the bad eating habits, and make a consistent pattern of choosing healthy, not fast. 

AFTER WEEK 1, ARE YOU FEELING / SEEING RESULTS?
I'm definitely feeling results! My energy levels have been off the charts and I feel so much more ready for the day having a plan made. I'm sleeping better, eating better, and I've even been able to cut out coffee and dairy without even missing it! 


WHAT IS YOUR FAV PART ABOUT BEING IN A CHALLENGE GROUP?
I love having a place to share my excitement with people in the same situation. We are all on this journey together and provide even better feedback and encouragement than anyone else! 

HOW HAS A CHALLENGE GROUP HELPED YOU?
It's helped me keep on track by tapping into that competitive nature and giving me a great source of accountability. Also, having daily posts and check ins keeps my interest up! 


NON-SCALE VICTORY:  
I'm feeling slimmer and it's only been 1 week!!!  I'm already feeling changes!!

When I reach my goals, I will feel stronger, healthier, and better in my own skin! <3
